CORN & BLACK BEAN SALAD

Prep Time:  25 minutes

 

Ingredients

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) yellow corn, rinsed and drained

1 container of grape tomatoes, sliced in half

½ cup olive oil

¼ cup balsamic vinegar

½ red onion, chopped

1 tablespoon minced garlic

1 bunch cilantro, coarsely chopped

1 teaspoon salt

 

Directions

1.       Place olive oil, balsamic vinegar, garlic and salt in small jar, cover with a lid, and shake until ingredients are well-mixed.

2.      In large bowl, combine beans, corn,  tomatoes, onions, and cilantro.  Pour dressing over salad, mix and serve.
